Mackerel wraps

I based this extremely losely on something a friend once gave me - but I don't think she'd recognise it, as hers used chicken and sour cream! 

  

You will need (per person):

  • 2 wraps (these ones were Lidl's seeded wraps)
  • Approx 100g mackerel - I like sweetcure smoked mackerel*
  • 1 tomato
  • A few leaves of lettuce 
  • Mayonnaise
  • Grated cheese 

What you do:

  1. Chop tomato. Tear up lettuce.
  2. Grill mackerel on both sides until cooked through and the skin is all crispy.
  3. Warm wraps
  4. Spead on some mayo 
  5. Divide lettuce, tomato, mackerel and cheese between wraps
  6. Roll up
  7. Eat

*My dad doesn't like smoked fish so I used a tin of mackerel for him, with the tomato sauce rinsed off, and heated through in a frying pan.

Cheese and apple pancakes 🧀🍏

This is how we do pancakes in my family - no-one knows where the recipe came from.

You will need
  • Pancakes (the crepe sort). We use pancake mix but you could do it properly of course.
  • Apples (we used two between three people)
  • A similar quantity of cheese e.g.cheddar

What you do
  1. Preheat oven 
  2. Grate the apple and cheese and mix together.
  3. Make the pancakes. 
  4. As each one is made, fill with apple and cheese mixture and roll up.
  5. Arrange on foil in a baking tray, cover with foil and put in oven for 10 minutes or until cheese is melted 
  6. Eat 😋
  7. Use up leftover batter (if any) to make more pancakes and eat with lemon & sugar, jam (or this time dulce de leche)

Chicken & bacon recipe

You will need:
  • Chicken breast (I used frozen chunks)
  • Bacon
  • Corn
  • Flour
  • Butter
  • Milk
  • Honey
  • Mixed herbs
  • Black pepper
  • Folded flatbreads, wraps or similar.
(Sorry, I didn't measure any of the quantities - this is why my white sauce is very unpredictable!)

What to do:
  1. Chop up the chicken and bacon and cook in a frying pan with a very little oil, until nice and brown and cooked through. (I tend to add a little water occasionally to stop it from sticking).
  2. Meanwhile, make white sauce with the milk, butter & flour.
  3. Add honey to sauce (I used a couple of teaspoons for 3 people). Add pepper & herbs.
  4. Add corn to frying pan and heat through.
  5. Add chicken/bacon/corn to sauce and stir.
  6. Warm flatbreads.
  7. Fill with mixture.
  8. Eat.

'Condensed' soup (plus recipe)

It's really difficult to get Campbell's condensed soup just now, which is not ideal if you have a recipe that needs it. But I thought of an idea - and it works!

If you mix powdered soup up with half the quantity of water, it gives you a pretty good condensed soup consistency. I actually preferred the texture. (I think I would sieve the croutons out in future, though - they got rather soggy waiting for the soup to be used!)


And here's the recipe - sausage pasta.

You will need:
  • Square sausage. I used 4 for 3 people (260g), and could easily have got away with less.
  • Frozen spinach. 3 lumps per person.
  • Pasta. Whatever you would normally use - I use a small handful each.
  • Condensed mushroom soup. One tin for 3 or 4 people. Or I used 3 packs of cup-a-soup, diluted with half the water.

What to do:
  1. Shred the sausage with a couple of forks into small lumps.
  2. Put in a large frying pan on medium heat  (no oil needed if it's non-stick). Stir from time to time until cooked.
  3. Meanwhile, cook the pasta.
  4. Also meanwhile, defrost the spinach in the microwave.
  5. When sausage is done, add spinach and stir through.
  6. When pasta is done, add to mixture (I use a slotted spoon, but if you drain it, make sure to reserve some of the cooking water).
  7. Stir in soup.
  8. Add a little pasta water to bind it and get the sauce to the consistency you want.
  9. Eat!

Tasty leftovers


Leftover cabbage, fried up with bacon. A few splashes of soy sauce. On granary bread. 

Wasn't sure what it would be like, but definitely worth repeating.
